Beth’s Russian Teacakes

Beth’s Russian Teacakes are just one of the many cookies that Beth bakes for her church’s bake sale. One of the comments I got often from A Little Christmas Magic was that reading this story made them hungry. With the timeline going from Thanksgiving to Christmas, it’s easy to see why the pages brimmed with food. This teacake recipe happens to be one of my husband’s favorites.

Beth’s Russian Teacakes
Ingredients
- 1 cup butter, softened
- 1/2 cup confectioners’ sugar
- 1 teaspoon vanilla
- 2 1/4 cups flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped pecans
Instructions
- Heat over to 400°F. Mix butter, sugar and vanilla thoroughly. Work in flour, salt and nuts until dough holds together. Shape the dough into 1-inch balls. Place on an ungreased baking sheet.
- Bake 10-12 minutes or until set, but not brown. While warm, roll in confectioners’ sugar. Cool. Roll in sugar again.
