Dani’s Strawberry Kiss Cookies

These cookies have a strawberries-and-cream flavor profile that makes it difficult to eat just one!

Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 8 tablespoons unsalted butter softened
  • ½ cup sugar
  • ½ cup graham cracker crumbs
  • ½ cup powdered freeze-dried strawberries
  • 1 large egg room temperature
  • 1 teaspoon strawberry extract
  • 2 tablespoons strawberry jam
  • 10-12 large marshmallows halved
  • 20-24 white chocolate candies

Instructions
 

  • Preheat oven to 350 F. Line two baking sheets with parchment paper. Whisk the flour, baking powder, baking soda and salt in a bowl.
  • In the bowl of a stand mixer fitted with a paddle, beat butter, sugar, ¼ cup of the graham crumbs and ¼ cup of the freeze-dried strawberry powder on medium speed for about 3 minutes, until pale and fluffy. Add the egg and strawberry extract and beat until incorporated. Reduce the speed to low and slowly add the flour mixture. Mix until just combined.
  • Place the remaining ¼ cup of crumbs and ¼ of strawberry powder in a shallow bowl. Working with 1 tablespoon of dough at a time, roll into balls, coat with the crumb mixture. Space the dough balls evenly on the prepared baking sheets. Bake 1 sheet at a time, for about 10-12 minutes, until just set and beginning to crack on the sides.
  • Switch the element to broiler to heat. While the cookies are still hot, press a finger in the middle of each cookie to create an indent. Place ¼ to ½ teaspoon of strawberry jam in the indent. Top the jam with 1 marshmallow half, cut side down. Broil the cookies until the marshmallows are golden, about 30 seconds, rotating halfway through to keep the browning even. Transfer the sheet to a wire rack and immediately place a white chocolate candy in the middle of the marshmallow, pressing down gently.
  • Repeat with the other baking sheet. Let the cookies cool completely before serving.

Notes

My plan had been to use white chocolate kisses, but apparently, they don’t exist. Hershey’s Cookies and Cream kisses work well, as do Crème Brulée hearts from Ghirardelli. In a pinch, a sprinkling of white chocolate chips works.
To make strawberry powder, blitz freeze-dried strawberries in a small food processor.
